This salad will inspire you to embrace the green goodness within! I’ve always been a sucker for broccolini – those elegant, tender stems that are not just good for you, but perfectly delicious with their mild, slightly sweet vibe. Just irresistible. Then there’s the newer cruciferous kid in town: the baby cauliflower, aka caulini. It’s like a treasure I stumbled upon, and now I’m utterly obsessed. Petite florets and a nutty flavor – pure salad gold.

So, naturally, I had to bring these two green celebrities together in a salad. The result? A mouthwatering Roast Broccolini & Caulini Salad, the stuff my dietitian-veggie-loving-brain dreams of eating on the daily.

When they hit the oven, that’s when the magic happens – you get that delightful roasted goodness. If you’re lucky enough the flowery heads will crisp up and char slightly – providing a delicious texture and flavour. Then of course there’s the vibrant and textural garnishes to tickle all your senses – some crunchy almonds, creamy feta, and those photogenic pomegranate arils, and you’ve got a salad that’s too good to scroll past.

Roast Broccolini & Caulini Salad

This salad combines the earthy flavours of roasted broccolini and caulini with the sweetness of pomegranate seeds, the crunch of almonds, and the creaminess of feta cheese, all tied together with a simple, tangy dressing.

For the Salad:

  • 2 bunches of broccolini washed and trimmed
  • 1 bunch of caulini also called fioretto or baby cauliflower, washed and trimmed
  • 2 cloves of garlic finely sliced
  • 1 tablespoon of extra virgin olive oil for roasting
  • Salt and pepper to taste

For the Dressing:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon maple syrup
  • 2 teaspoon wholegrain mustard
  • The juice of half a lemon
  • Salt and pepper to taste

To Garnish:

  • 1/4 cup roasted almonds roughly chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pomegranate arils


  • Preheat your oven to 180°C.
  • Trim the tough ends of the broccolini and caulini, and then spread them out on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat them evenly.
  • Roast the broccolini and caulini in the preheated oven for about 10-12 minutes, or until they are tender and slightly crispy at the edges. Be sure to keep a close eye on them so they do not get burnt.
  • While the vegetables are roasting, prepare the dressing. In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, maple syrup, lemon juice, wholegrain mustard, salt, and pepper until well combined. Adjust the seasoning to taste.
  • Once the broccolini and caulini are done roasting, remove them from the oven and let them cool for a few minutes.
  • I like to serve mine straight from the baking tray (because who wants to wash extra dishes?) So simply drizzle the dressing straight over the top, then garnish by sprinkling over your chopped almonds, fetta and pomegranate arils.
  • Serve your Roast Broccolini and Caulini Salad immediately, and enjoy!


Note: if you are not serving immediately, hold off on adding the dressing and garnishes until you are ready to ensure it’s stays vibrant and fresh!
