
Pork Pad See Ew
A flavour-packed Thai-inspired pad see ew with pork strips, crunchy veg, rice noodles, and that classic pad see ew flavour.

Ingredients
Pork & Noodles
- 500 g Coles Pork Loin Steaks sliced into strips
- 200 g wide rice noodles dried weight
Vegetables
- 2 carrots sliced into half moons
- 200 g mushrooms sliced
- 2 cups broccoli florets
- 2 bunches choy sum cut into 5 cm pieces
- 2 spring onions sliced
Other
- 4 cloves garlic minced
- 2 large eggs
Sauce
- 1-2 tbsp olive oil
- 3 tbsp sweet soy sauce kecap manis
- 2 tbsp oyster sauce
- 1½ tbsp dark soy sauce
Optional
- Chilli slices
- Lime wedges to serve
- Coriander leaves
Instructions
- Prepare noodles according to packet instructions, then drain and set aside.
- Heat a large pan or wok over high heat with olive oil. Add pork and cook until browned and caramelised. Remove and set aside.
- In the same pan, add garlic, broccoli, carrot and mushrooms. Cook for 2–3 minutes until just tender.
- Push everything to one side, crack in the eggs and scramble, then mix through the vegetables.
- Add choy sum and spring onion whites, cooking until just wilted.
- Add noodles and sauce, tossing until everything is glossy and well coated.
- Return pork to the pan, toss through, and finish with spring onions.
- Serve with optional chilli, coriander and a squeeze of lime.
