Chicken Fajita Tray Bake

Chicken Fajita Tray Bake

A vibrant, spice-roasted chicken fajita tray bake with caramelised capsicum and onion, tender chicken and a fresh squeeze of lime. Serve inside warm tortillas, with avocado and yoghurt for a simple yet delicious dinner.

Ingredients
  

  • 600 g chicken tenderloins
  • 3 capsicums sliced (yellow, red and green)
  • 1 red onion sliced
  • 2 tbsp olive oil
  • Juice of ½ lime

Spices

  • 2 tsp Planet Organic paprika
  • 1 tsp Planet Organic ground cumin
  • 1 tsp Planet Organic garlic powder
  • 1 tsp Planet Organic onion powder
  • 2 tsp Planet Organic dried oregano
  • ¼ tsp Planet Organic cayenne pepper
  • ½ tsp salt
  • tsp Planet Organic black pepper

To serve

  • Mini tortillas
  • Avocado sliced
  • Greek yoghurt
  • Lime wedges
  • Fresh coriander

Instructions
 

  • Preheat oven to 200°C
  • Add the chicken tenderloins, capsicum and red onion to a large baking tray.
  • Drizzle with olive oil and lime juice. Add spices, salt and pepper, then toss well to evenly coat.
  • Spread into a single layer in the tray.
  • Roast for 20-25 minutes, until golden and cooked through.
  • Serve with warm tortillas, avocado, yoghurt, lime and coriander.
