Crispy Air Fryer Chips with Aioli

These herb-infused air fryer chips with lemon-garlic aioli have become a staple in my kitchen. They are the perfect trifecta of ease, speed, and irresistible flavour. They’re so easy to throw together, and the air frying transforms humble potatoes into crispy, golden perfection in just 20 minutes. The blend of thyme, oregano, garlic and paprika, combined with a quick-to-whip-up lemon-garlic aioli, elevates the experience to a whole new level. I’ve literally been making these chips twice a week for the past month. They are perfect for entertaining or adding to your midweek burger. You will be making these on repeat!

Crispy Air Fryer Chips with Aioli

Crispy herb-infused air fryer chips, perfectly seasoned with thyme, oregano, turmeric and paprika, served with a zesty lemon-garlic aioli and a sprinkle of fresh parsley.

Servings 4


For the Chips:

  • 4 large white potatoes with the skin on washed
  • 1-2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornflour
  • Fresh parsley chopped (for garnish)

For the Lemon-Garlic Aioli:

  • 1/2 cup mayonnaise
  • 1 cloves garlic minced
  • 1/2 lemon juiced
  • Pinch of salt


Prepare the Potatoes:

  • Slice the potatoes into thin 1cm chips. You can use a mandoline slicer for even thickness.
  • Place the sliced potatoes in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch.

Dry and Season the Potatoes:

  • Drain the soaked potatoes and pat them dry with a clean kitchen towel or paper towels.
  • In a large bowl, toss the potato slices with olive oil, thyme, oregano, paprika, garlic powder, turmeric, salt, black pepper, and cornflour until evenly coated.

Air Fry the Chips:

  • Arrange the seasoned potato slices in a single layer in the air fryer basket, making sure they don’t overlap.
  • Air fry for 20 minutes, shaking the chips halfway through the cooking time. Keep an eye on them as your air fryer may cook them quicker than 20 mins.

Make the Aioli:

  • In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and a pinch of salt.

Serve and Garnish:

  • Once the chips are done, transfer them to a serving plate.
  • Garnish the crispy seasoned air fryer chips with fresh chopped parsley.
  • Serve with the homemade aioli on the side for dipping.
