White Peach Pastries, where tender poached white peaches nestle within golden puff pastry squares, kissed with saffron-infused vanilla syrup and crowned with a dusting of icing sugar.

  • 2 sheets Puff pastry
  • 4 White peaches halved
  • 2 cups Water
  • 1 cup Sugar
  • 1 tsp Vanilla bean paste
  • 1/2 Lemon
  • Pinch Saffron
  • 1 Egg beaten with 2 tsp water (for egg wash)
  • 1 TBS Raw sugar for sprinkling
  • 1 TBS Icing sugar for dusting
  • Vanilla ice cream for serving


Poaching the Peaches:

  • In a saucepan, combine water, sugar, vanilla bean paste, the lemon half, and saffron. Bring to a simmer over medium heat.
  • Add the white peach halves to the simmering liquid. Poach for about 8-10 minutes or until the peaches are tender.
  • Remove the peaches from the poaching liquid and set aside.
  • Keep the poaching liquid and reduce down by allowing it to simmer for a further 10 minutes, or until it slightly thickens into a syrup. Set aside.


  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
  • Cut the puff pastry sheets into even squares.
  • Place a halved peach in the center of each pastry square.
  • Using a knife, gently score a border around each peach on the pastry.
  • Brush the exposed surface of the peach with the prepared syrup from the poaching liquid.
  • Brush the scored border of the pastry with the egg wash.
  • Sprinkle raw sugar over the pastry.
  • Bake in the preheated oven for 25 minutes or until the pastry is golden brown.


  • Remove from the oven and let cool for a few minutes.
  • Dust the pastries lightly with icing sugar.
  • Serve each White Peach Pastry with a scoop of vanilla ice cream and a drizzle of the gorgeous saffron and vanilla infused syrup.
