Love corn on the cob? Well you will be totally obsessed with these corn ribs! They’re sweet, juicy (but with lovely crispy bits), and absolutely flavour packed! They also don’t take more than 20 minutes to put together.

The process begins with fresh corn, peel the husks off, top and tail them, and then very (very!) carefully cut them into quarters length wise. You will need an extremely sharp knife for this. Then coat them with olive oil, fresh lime juice and your favourite Mexican seasoning. 

Once they’re cooked, I love to drizzle them with extra lime, my home-made chipotle mayo, and a little dazzle of fresh coriander.

Corn, the star of the dish is not only delicious, but also packs a nutritional punch. Rich in fibre, vitamins, and antioxidants, corn supports digestive healthy and complex carbohydrates.

As you bite into the corn ribs, you will be hit with a sensory experience like no other. Sweet, savoury, tangy, crispy, chewy, totally mouth-wateringly delicious. They are perfect for entertaining and jazzing up the humble corn. You will be making these on repeat!

These Corn Ribs are bursting with vibrant flavour, accompanied by zesty lime, fresh coriander, and a creamy homemade chipotle mayo, they're the perfect veggie side.

For the Corn Ribs:

  • 3 Corn on the cob topped, tailed, cut into quarters lengthwise
  • Extra-virgin olive oil spray
  • 1 TBS Mexican seasoning
  • 1 Lime
  • Fresh coriander for serving

For the Chipotle Mayo:

  • 1 cup Mayonnaise
  • 3 Chipotle peppers in adobo (roughly 3 TBS)
  • 2 tablespoons Lime juice
  • pinch Salt
  • 2 Garlic cloves


  • Prepare the corn ribs by cutting each corn on the cob into quarters lengthwise. You will need a very sharp knife for this, and please watch your fingers!
  • Spray the corn ribs with extra-virgin olive oil, and squeeze half a lime over them.
  • Coat them generously with Mexican seasoning.
  • Then simply place them into your air fryer at 180°C (about 350°F).
  • Air fry for 10-12 minutes until they are golden and slightly crispy.
  • Meanwhile make your chipotle mayo by blending together the mayo, chipotle peppers, lime juice, salt, and garlic cloves.
  • Blend until smooth and creamy.
  • Once the corn ribs are done, drizzle fresh lime juice over them.
  • Sprinkle chopped coriander for added freshness.
  • Serve the corn ribs hot, with a side of the homemade chipotle mayo for dipping.
