Air Fryer Fish Tacos
Ingredients
- 1 C White cabbage thinly shredded
- 1 C Red cabbage thinly shredded
- 1/2 C Carrot julienne
- 1/2 Red onion thinly sliced
- 3 TBS Fresh coriander roughly chopped
- 12 Corn tortillas, mini
For the Homemade Chipotle Mayo
- 1 cup Whole egg mayonnaise
- 3 Chipotle peppers in adobo
- 2 TBS Lime juice plus additional lime wedges for serving
- 1/4 tsp Salt
- 2 Garlic cloves finely crushed
For the Air-Fried Fish
- 500 g Barramundi fillets, or your favourite white fish fillets
- 1 cup Breadcrumbs
- 2 TBS Mexican seasoning (store bought is fine, or make your own)
- 1/2 tsp Salt
- 1/2 tsp Black pepper, ground
- 1-2 TBS Olive oil spray
Instructions
Prepare the Chipotle Mayo
- In a blender, combine the whole egg mayonnaise, chipotle peppers, lime juice, salt, and garlic cloves. Blend until smooth. Set aside.
Prepare the Salads
- To make the slaw, simply mix the white cabbage, red cabbage and carrot in a bowl. Set aside.
- Mix thinly slice red onion, and fresh coriander. Set aside.
Prepare the Fish
- Cut your fish fillets into nugget or finger sized pieces.
- Create your breading mix by combining bread crumbs, salt, pepper and Mexican seasoning in a medium sized bowl.
- Coat each fish piece with the breadcrumb mix.
Air Fry the Fish
- Place the breaded fish fillets in the air fryer basket, ensuring they are not overlapping, and spray them lightly with olive oil.
- Set the air fryer to 180°C and cook the fish for 15 minutes or until cooked through.
Warm the Tortillas
- While the fish is cooking, warm the corn tortillas in a microwave, or you can also do this in your air fryer or on a fry pan.
Assemble the Tacos
- Grab a warm corn tortilla and place down your slaw mix, followed by the coriander and onion mix
- Place a piece of freshly air-fried fish on top.
- Add a generous drizzle of the chipotle mayo and finish with a squeeze of lime!
