Smoky BBQ Corn Ribs

Love corn on the cob? Well you will be totally obsessed with these corn ribs! They’re sweet, smoky, and juicy (but with lovely crispy bits), and absolutely flavour packed! They also don’t take more than 20 minutes to put together.

The process begins with fresh corn, peel the husks off, top and tail them, and then very (very!) carefully cut them into quarters length wise. You will need an extremely sharp knife for this. Then coat them with olive oil, a BBQ flavoured seasoning. Once they’re cooked, I love to drizzle them with a smoky BBQ sauce and a little sprinkling of fresh cut chives.

Corn, the star of the dish is not only delicious, but also packed with nutritional benefits. Rich in fibre, vitamins, and antioxidants, corn supports digestive healthy and provides you with complex carbohydrates.

As you bite into the corn ribs, you will be hit with a sensory experience like no other. Sweet, savoury, smoky, crispy, chewy, totally mouth-wateringly delicious. They are perfect for entertaining and jazzing up the humble corn. You will be making these on repeat!

Smoky BBQ Corn Ribs

These sweet and smoky air-fried corn ribs are seasoned with a BBQ seasoning, topped with fresh cut chives and served with a smoky chipotle BBQ sauce.

Ingredients
  

Smoky BBQ Corn Ribs:

  • 3 Corn on the cob topped tailed, cut into quarters lengthwise
  • Extra-virgin olive oil spray
  • 1 TBS BBQ flavoured seasoning or see below for recipe
  • Fresh chives for serving
  • Smoky BBQ sauce for serving I like to use a smoky chipotle BBQ sauce for a heat kick

BBQ Seasoning:

  • 1 TBS smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp back pepper
  • 1/4 tsp chilli powder optional

Instructions
 

  • Prepare the corn ribs by cutting each corn on the cob into quarters lengthwise. You will need a very sharp knife for this, and please watch your fingers and keep them out of the way!
  • Spray the corn ribs with extra-virgin olive oil
  • Coat them generously with BBQ seasoning. If making the BBQ seasoning, simple mix all seasoning ingredients together.
  • Then simply place them into your air fryer at 180°C (about 350°F).
  • Air fry for 12 minutes until they are golden and slightly crispy.
  • Once the corn ribs are done, drizzle a little smoky BBQ sauce
  • Sprinkle chopped chives for added freshness.
  • Serve the corn ribs hot, with a side of the smoky BBQ sauce for dipping.
