Ricotta Gnocchi w Broccoli, Burnt Butter & Sage
A quick and comforting ricotta gnocchi with tender broccoli, nutty burnt butter and crispy sage. Perfect for a cosy dinner.

Ingredients
Ricotta Gnocchi
- 1-1.5 cups 00 flour
- 3/4 cup Parmesan grated
- 500 g ricotta
- 3 egg yolks
- 3/4 tsp salt optional
The Rest
- 1 head broccoli florets
- 1 TBS olive oil
- 1-2 TBS butter
- 1/4 cup slivered almonds
- Handful sage leaves
Instructions
- Mix ricotta, egg yolks, Parmesan, and salt. Gradually add flour until just combined. Flour the surface of the mixture and roll into ropes, before cutting into 1 inch pieces. Roll each piece over a gnocchi board or fork to get the traditional gnocchi pattern.
- Boil the gnocchi in salted water until they float, then cook for a further 1 minute. Remove with slotted spoon.
- In a pan, sauté broccoli in olive oil until tender. Melt the butter in the same pan, add sage and almonds until sage is crispy and butter is browned.
- Fry gnocchi in sage butter mixture, season with salt and pepper, and mix.
- Mix all components in the pan and serve immediately.
