
Pan-fried Broccoli with Garlic and Parmesan
Golden, garlicky pan-fried broccoli finished with parmesan. it's a flavour-packed side that even broccoli haters will love.

Ingredients
- 1 head broccoli stem intact
- 1 tbsp extra virgin olive oil
- 2 cloves garlic thinly sliced
- Salt & cracked black pepper
- Freshly grated Parmigiano Reggiano or parmesan cheese to serve
Instructions
- Trim the broccoli, peel the woody bits off the stem using a peeler or knife, and slice lengthways into 6 even long pieces.
- Heat a pan over medium-high heat and add the olive oil.
- Place broccoli in the pan, ensuring the surface makes good contact, and let it brown undisturbed for 2–3 minutes until deeply golden on one side.
- Flip them over the brown on the other side, then add the garlic slices and a generous amount of salt and pepper.
- Add a small splash of water (approx 1/4C), cover the pan with a lid, and let the broccoli steam for 2 minutes until just tender.
- Remove the lid and let the water evaporate so the broccoli colours on both sides.
- Transfer to a plate and finish with a generous snowfall of freshly grated parmesan.
