
Broccoli and Ricotta Fritters
Ingredients
- 1 small head of broccoli you should end up with 2 cups of finely chopped broccoli (1 small head or ½ extra-large head of broccoli)
- 250 g ricotta cheese approx. 1 C
- 4 eggs
- ¾ cup milk
- ¼ cup freshly grated Parmigiano Reggiano cheese
- ¼ cup chopped parsley
- ¼ cup chopped spring onion
- ¼ cup chopped chives
- 1 teaspoon sea salt flakes
- ½ teaspoon ground black pepper
- 2 teaspoons baking powder
- 1 cup plain flour can substitute wholemeal for extra fibre
- ½ teaspoon baking soda
- ½ teaspoon ground paprika
- ½ teaspoon garlic powder
- 1 tablespoon extra-virgin olive oil for cooking
- Dill Yoghurt
- 1 cup Greek-style yoghurt
- 1 tablespoon freshly chopped dill
- 1 teaspoon fresh lemon juice
- To Serve
- 1 avocado cut into wedges for serving on top
Instructions
- Start by washing and finely chopping the broccoli, parsley, spring onion, and chives.
- Place your freshly cut produce into a mixing bowl, then add the ricotta, eggs, milk, Parmigiano Reggiano and give the mix a good stir to combine
- Add the flour, baking powder, baking soda, paprika, garlic powder, salt, and pepper. Mix until you have a smooth, consistent batter.
- Heat a non-stick frypan over medium heat and add some of the olive oil.
- Using a ⅓ cup measuring cup, scoop portions of the batter into the pan, spreading slightly to flatten into fritters.
- Cook for 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining batter.
- In a small bowl, mix the Greek yoghurt, chopped dill, and lemon juice. Stir until well combined.
- Serve the fritters warm with a dollop of dill yoghurt and wedges of avocado on top.
Notes
These fritters can also be made ahead and reheated in a pan or microwave for a quick meal. They’re also delicious cold!
