Golden Maple Pecan Granola has become my ultimate go-to blend for Autumn. It’s a recipe that never fails to evoke feelings of warmth and comfort, especially during the cooler seasons. This granola embodies the essence of Autumn, with its rich golden hues and the delightful aroma of maple syrup and pecans wafting through the air as it bakes. It’s a wholesome treat that brings a touch of seasonal nostalgia with every mouthful.

What sets this granola apart is its careful balance of flavours and textures. The combination of hearty rolled oats, crunchy pecans, and earthy buckwheat groats creates a satisfying crunch that pairs perfectly with the subtle sweetness of maple syrup, and trust me, it’s not too sweet.

The addition of raw pepitas and desiccated coconut adds a depth of flavour and a hint of nuttiness, rounding out the overall profile of this granola blend.  Switching up my traditional granola recipe with maple syrup and pecans was a game-changer. The maple syrup not only adds a natural sweetness but also caramelises during baking, creating irresistible crunchy clusters of golden granola.

Whether enjoyed with yogurt and fresh fruit for breakfast or as a crunchy snack on its own, this Golden Maple Pecan Granola has earned its place as a beloved staple in my autumn pantry. It’s a reminder of cosy moments spent indoors, savouring the simple pleasures of the season. I’m obsessed!

  • 3 cups rolled oats
  • 1/2 cup raw buckwheat groats
  • 1.5 cups pecans
  • 3/4 cup raw pepitas pumpkin seeds
  • 3/4 cup desiccated coconut
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup extra virgin olive oil
  • 3 heaped tablespoons smooth peanut butter 100% peanuts
  • 3/4 cup maple syrup

  • Preheat your oven to 130°C (265°F) and line a baking tray with baking paper.
  • In a large mixing bowl, combine the rolled oats, buckwheat groats, chopped pecans, pepitas, desiccated coconut, salt, and ground cinnamon.
  • In a small saucepan, combine the olive oil, peanut butter, and maple syrup. Heat the mixture over low heat, stirring constantly until well combined and smooth.
  • Pour the warm wet ingredients over the dry ingredients in the mixing bowl. Mix thoroughly until all the dry ingredients are evenly coated with the wet mixture.
  • Spread the granola mixture evenly onto the prepared baking tray.
  • Bake in the preheated oven for 1 to 1.5 hours, do not stir the mix as you want to create clusters. The granola should be a deep golden brown.
  • Once done, remove the granola from the oven and let it cool completely on the baking tray. It will crisp up as it cools to room temperature.
  • Once cooled, break the granola into clusters and store it in a clean, airtight container. It can be stored for up to a month.
