
Super Green Pea Fritters
Green peas and a mix of fragrant herbs bring a savoury freshness to these simple breakfast fritters. Paired with a creamy Greek yoghurt and fresh avocado, this will easily become a weekend favourite.

Ingredients
Fritters
- 2 cups frozen green peas thawed (1 cup for blending, and 1 cup left whole
- 2 eggs
- ½ cup chopped parsley including stems
- 2 spring onions finely sliced
- 1 Tbsp chopped chives
- ¾ tsp sea salt
- ¼ tsp black pepper
- ⅓ cup finely grated Parmesan cheese
- ½ cup plain or wholemeal flour or a mix of both
- 1 Tbsp olive oil for frying
To serve
- ½ cup Greek yoghurt
- 1 Tbsp extra chopped chives
- 1 avocado sliced
Instructions
- Add 1 cup peas, eggs and parsley to a bowl. Use a stick blender to blend until smooth, thick and beautifully bright green.
- Transfer the mixture to a large bowl. Stir in the remaining whole peas, spring onion, chives, Parmesan, salt and pepper.
- Gently fold through the flour until just combined.
- The mixture should be thick and spoonable, not runny. If needed, add 1–2 tablespoons extra flour.
- Heat olive oil in a non-stick pan over medium heat.
- Spoon heaped tablespoons of batter into the pan and flatten slightly.
- Cook for 2–3 minutes per side until golden and cooked through.
- Mix chives through the Greek yoghurt.
- Serve fritters warm with chive yoghurt and sliced avocado.
