This Rustic Garden Quiche is a fresh and modern twist on the classic French quiche Lorraine, which traditionally features a filling made with bacon and cheese. While the basic concept remains the same, this new variation introduces an abundance of fresh, seasonal vegetables, including zucchini and broccoli, which add a burst of colour, flavour and nourishment to the dish.

While the French quiche Lorraine can be heavy and rich, this version is light and refreshing, making it perfect for sharing with friends and family on a sunny afternoon. The use of a shortcrust pastry shell gives the dish a rustic and homestyle feel, while the custard filling made from eggs, milk, and Gruyère (sub for tasty or cheddar) cheese adds a creamy and savoury element that is both familiar and comforting.

Eggs which are a hero of the dish are a great source of protein and are also rich in vitamins and minerals including vitamins D and B12, choline and selenium. They can help to promote satiety, making them a great addition to a meal for those looking to control appetite.

Rustic Garden Quiche

This Rustic Garden Quiche is a hearty and flavourful dish that's perfect for sharing with friends for a casual brunch or afternoon gathering. The combination of savory bacon, fresh garden vegetables, and rich cheese custard make for a delicious and satisfying meal. Ingredients
  

  • 2 sheets of shortcrust pastry

Bacon & Veg Filling

  • 200 g of shortcut lean bacon diced
  • 200 g button mushrooms sliced
  • 1 zucchini sliced into half moons
  • 1 large head of broccoli cut into small florets
  • 5-6 spring onions thinly sliced
  • Salt and pepper to taste

Egg Mixture

  • 1 cup of Gruyère cheese, grated Tasty OR Cheddar work well here too
  • 1 tablespoon of Parmigiano Reggiano or Parmesan cheese grated
  • 6 large eggs
  • 1 cup of whole milk you can use 1/2 cup of milk and 1/2 cup of cream for a richer quiche
  • Salt and pepper to taste

Garnish

  • 1 tablespoon fresh chives chopped, for garnishing

Instructions
 

  • Preheat the oven to 180°C/350°F. Roll out the shortcrust pastry and use it to line a 23cm/9 inch quiche dish. Prick the base of the pastry with a fork and chill it in the fridge for 10 minutes.
  • Blind bake the pastry for 15 minutes with a sheet of baking paper over the top and pastry weights. I like to use dry beans instead (I pop them in the freezer and reuse them each time)
  • After 15 minutes, remove the pastry weights and baking paper and bake for a further 10 minutes to ensure the base will not end up soggy
  • Meanwhile, in a large frying pan, cook the diced bacon until crispy. Add in the sliced mushrooms and sauté until they're tender. Add in the zucchini and broccoli florets and cook until they just start to cook – you don't want to cook them through. Remove from heat, add salt and pepper and sprinkle in the spring onion. They will cook again in the oven.
  • In a separate bowl, whisk together the eggs, whole milk, and salt and pepper to taste.
  • Pour the bacon and vegetable mixture into the par-cooked pastry shell. Sprinkle over the grated Gruyère cheese and grated Parmesan cheese, then pour the egg mixture over the top, making sure it's evenly distributed.
  • Bake the Rustic Garden Quiche in the preheated oven for 30 minutes or until the filling is set and the pastry is golden brown.
  • Allow the quiche to cool for a few minutes before slicing and serving. Garnish with chopped chives before serving.
