Raspberry & Lemon Bundt

Ingredients
  

Cake:

  • 100 g butter (room temperature) plus 10g melted for greasing the cake tin
  • 1/4 cup Greek-style yoghurt (room temperature)
  • 1 3/4 cups sugar
  • 1/2 teaspoon salt
  • 4 large eggs (room temperature)
  • 3 cups self-raising flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon bicarbonate soda
  • 1 cup milk
  • Zest of 1 large lemon save the juice for the glaze
  • 1 1/2 cups raspberries frozen or fresh

Glaze & Topping:

  • 1 teaspoon melted butter
  • 1 teaspoon vanilla essence
  • 2-3 tablespoons lemon juice
  • 1 cup sifted icing sugar
  • A punnet of fresh raspberries to top the cake

Instructions
 

  • In a bowl, whisk together the softened butter and Greek-style yoghurt until they come together smoothly.
  • Add the sugar to the bowl and whisk until well mixed. Beat in the eggs, one at a time, followed by the milk and vanilla essence.
  • Gently fold in the self-raising flour, baking powder, bicarbonate of soda, lemon zest, and a pinch of salt. Mix until the batter becomes smooth and uniform, being careful not to over-beat it.
  • Grease and flour your Bundt tin. Layer one-third of the batter at the bottom and top with half of the raspberries. Repeat with another one-third of the batter and the remaining raspberries. Finally, add the remaining batter on top.
  • Bake the cake in a preheated oven at 180°C for approximately 1 hour or until an inserted skewer comes out clean.

Notes

For the best results, ensure that the butter, yoghurt, and eggs are at room temperature. This helps in achieving a smooth and well-incorporated batter.
The frozen or fresh raspberries can be used interchangeably, allowing you to enjoy the lusciousness of this cake all year round.
Be careful not to over-beat the batter after adding the dry ingredients. Over-mixing may result in a dense texture.
Allow the cake to cool before glazing to prevent the glaze from melting and sliding off the cake.
