Herby Green Pea Fritters

Green peas and a mix of fragrant herbs bring a savoury freshness to these simple breakfast fritters. Paired with zesty guacamole and creamy Greek yoghurt, this will easily become a weekend favourite.

  • 1 C Green peas thawed from frozen
  • 4 Large eggs
  • 2 TBS Parmesan cheese grated
  • 1/2 C Milk
  • 1 C Fresh mixed herbs. I've used parsley, mint, basil and spring onion. coriander, dill and chives work well too.
  • 1/2 tsp Ground black pepper
  • 1 tsp Salt
  • 1 C Self raising flour
  • 1 tsp Baking powder
  • 1/4 tsp Baking soda

To serve: Guacamole and Greek yoghurt

  • 1 Avocado
  • 1 TBS Lime freshly juiced
  • 1 Tomato diced
  • Salt to taste
  • Pepper to taste
  • 1/2 C Greek yoghurt


  • Place green peas in a bowl and mash roughly with the back of a fork.
  • Add in the eggs, parmesan cheese, milk, herbs, salt, pepper, and whisk together with a fork to combine.
  • Mix in your self raising flour, baking powder and baking soda to form the batter
  • Heat a non-stick pan over a low to medium heat and pour 1/3C of batter in to form pancake-like rounds. Cook for 1-2 minutes before flipping to cook the other side.
  • To make the guacamole, simply mash the avocado, lime, diced tomato, and season with salt and pepper
  • Serve the fritters with a generous dollop of guacamole and a spoon of Greek yoghurt


These are a great weekend breakfast staple. Mix up the vegetable component for some interesting combinations. You can swap peas for corn, grated zucchini, sweet potato, or finely diced broccoli and capsicum.
