Greek Pasta Salad with Grilled Chicken

A nourishing twist on the traditional Greek salad, featuring pasta and a side of Greek-style grilled chicken for a wholesome balanced meal.

Ingredients
  

For the Salad:

  • 300 g dried bowtie pasta or any preferred shape, cooked according to package instructions
  • 3 Lebanese cucumbers diced
  • 1 punnet cherry tomatoes halved
  • 1 small red onion finely sliced
  • 2 capsicums green or a mix of green and yellow, diced
  • 1 cup pitted Kalamata olives
  • 1 cup cubed Greek feta cheese

For the Dressing:

  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1-2 tsp dried oregano
  • Juice of 1 small lemon
  • Salt and pepper to taste

For the Grilled Chicken:

  • 800 g chicken breast sliced into thinner fillets
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Squeeze of lemon
  • Optional: Use Greek Grilling Spice from Gewurzhaus for the perfect all-in-one seasoning.

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.
  • While the pasta is cooking, sliced the cucumbers, capsicums, and halve the cherry tomatoes. Slice the red onion into fine strips. Combine all the veggies in a large mixing bowl along with the Kalamata olives and feta.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, lemon juice, salt, and pepper. Adjust seasoning to taste.
  • Toss the cooked pasta with the chopped vegetables and pour the dressing over. Gently toss to combine, making sure the salad is evenly coated. Set aside while you grill the chicken.
  • Rub the chicken fillets with olive oil, salt, pepper, dried oregano, garlic powder, and a squeeze of lemon. Heat a grill pan or fry pan over medium heat. Grill the chicken for 4-5 minutes per side, or until cooked through and nicely browned. Alternatively, grill in the oven.
  • Plate the pasta salad and top with the grilled chicken. Optionally, garnish with extra feta or a drizzle of olive oil before serving.
