Double Choc Brownies

Double Choc Brownies

These Double Choc Brownies are an absolute classic and have been my go-to recipe for years. The combination of rich cocoa powder, dark chocolate chips, and a perfectly balanced sweetness makes these brownies a timeless favourite. What sets them apart is their chewy yet fudgy texture that practically melts in your mouth with every bite, creating a heavenly chocolate experience that’s hard to resist.

One of my favourite finishing touches is adding a generous sprinkle of flaky salt over the top of the brownies after baking. This simple addition not only enhances the chocolate flavour but also adds a delightful contrast that balances out the sweetness. The slight saltiness cuts through the richness, that elevates these brownies to a whole new level of decadence. Whether enjoyed warm with a scoop of vanilla ice cream or savoured on their own, these double chocolate brownies never fail to bring joy and satisfaction.

  • 300 g sugar
  • 170 g unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla essence
  • 1/2 cup 45g cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 160 g flour
  • 125 g dark chocolate chips
  • flaky salt for garnishing optional, but game-changing!

  • Preheat your oven to 180°C (350°F) and grease a 23x23cm (9×9 inch) baking pan.
  • In a mixing bowl, combine the melted butter with the sugar. Mix well until smooth.
  • Add the eggs and vanilla essence to the sugar and butter mixture, one at a time, mixing thoroughly after each addition.
  • Sift the cocoa powder over the wet ingredients and mix until well incorporated.
  • In a separate bowl, sift together the baking powder, salt, and flour. Then add this to the wet ingredients, folding gently until just combined. Do not overmix.
  • Finally, fold in the dark chocolate chips until evenly distributed throughout the batter.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for about 28-30 minutes, or until a toothpick inserted into the centre comes out with moist crumbs (not wet batter).
  • Remove from the oven and allow the brownies to cool completely in the pan before cutting into squares and serving.
  • If you love a bit of salt, sprinkle your brownies with a generous pinch of flaky salt!
