Crunchy Snow Pea Salad
A fresh, crunchy snow pea salad tossed with lemon, dill and chives, finished with toasted almonds for texture and balance.

Ingredients
- 500 g snow peas
- ½ cup green peas fresh or frozen
- 2 Tbsp chopped fresh dill
- 2 Tbsp chopped fresh chives
- ¼ cup toasted chopped almonds plus extra to garnish
For the Dressing
- 1 lemon zest and juice
- 1 tsp wholegrain mustard
- 1 Tbsp extra-virgin olive oil
- 1 tsp maple syrup
- Sea salt and cracked black pepper to taste
Instructions
- Wash the snow peas well, and top and tail them.
- Bring a pot of water to the boil. Add the snow peas and green peas and blanch for 1 minute only. Immediately transfer to an ice bath to lock in the colour and crunch. Drain very well.
- Slice each snow pea lengthwise into two or three pieces.
- In a large mixing bowl, whisk together the lemon zest, lemon juice, wholegrain mustard, olive oil, maple syrup, salt and pepper.
- Add the blanched snow peas and green peas to the bowl along with the dill and chives. Toss thoroughly until everything is evenly coated.
- Fold through the chopped toasted almonds. Transfer to a serving bowl and garnish with extra almonds and fresh herbs.
